Pickled Carrots and Daikon
Ingredients
4 carrots
1 daikon
1 cup sugar
4 tsp sugar
2 tsp salt
1 1/2 cup white vinegar
1 cup warm water
Step 1
Julienne carrots and daikon
2 1/2 inch in length by 1/4 inch thick
Step 2
Sprinkle 4 tsp of sugar and 2 tsp of salt.
Toss the carrots and daikon for 3 minutes or until you can bend a daikon without breaking it.
Step 3
Transfer the carrots and daikon into a colander and rinse well.
Step 4
In a bowl, mix together 1 cup of sugar, 1 1/2 cup white vinegar and 1 cup of warm water until the sugar dissolves.
Pour the vinegar and sugar mixture over the carrots and daikon in jars.
Final step
Seal and refrigerate. Wait for it to sit overnight, serve and enjoy!
